Pass the Bharta

I am still on my Indian kick- and I have a new delicious and flavorful recipe for you.  This one is based on eggplant, so dish up cleansers!

Bharta
1 pound eggplants
1 T oil
1 large onion, finely chopped (food processor works great here)
1 garlic clove, minced
1 fresh green chile, seeded and chopped
1 T ground coriander seeds
1 T finely chopped cilantro leaves, plus extra to garnish
1 T lemon juice
Salt for seasoning

1.  Cook eggplant in a preheated 350 degree oven for 30 mins, or until they are softened.
2.  Cool slightly, slit open, scoop out all the eggplant flesh and mash it with a fork.
3.  Heat oil in a pan, add the onion, garlic and chile and fry until the onion is soft but not colored.
4.  Add the ground coriander, fresh cilantro and salt to taste.  Add the mashed eggplant, stir well and cook, uncovered, for 2 minutes.  Cover and simmer very gently for 5 minutes.  Sprinkle with lemon juice and garnish with cilantro leaves.
